Garden Vegetable Gazpacho.

Ingredients

  • 2 pounds Tomatoes , peeled, seeded and cubed
  • 1 medium cucumber, peeled and cubed
  • 1 cup celery, sliced
  • 1 medium DOLE® Carrots , peeled and cubed
  • 1/2 DOLE Onion, cubed
  • 2 garlic cloves, halved
  • 2 cups low sodium vegetable juice, chilled
  • 2 cups tomato juice, chilled
  • 1/4 cup red wine vinegar
  • 3 tablespoons olive oil
  • Ground black pepper

Directions

  1. Place tomatoes, cucumber, celery, carrots, onion and garlic in food processor container.
  2. Cover and process until chopped but not pureed.
  3. Pour into large bowl, stir in vegetable juice, tomato juice, vinegar and oil.
  4. Season with ground pepper to taste.
