- 2 pounds Tomatoes , peeled, seeded and cubed
- 1 medium cucumber, peeled and cubed
- 1 cup celery, sliced
- 1 medium DOLE® Carrots , peeled and cubed
- 1/2 DOLE Onion, cubed
- 2 garlic cloves, halved
- 2 cups low sodium vegetable juice, chilled
- 2 cups tomato juice, chilled
- 1/4 cup red wine vinegar
- 3 tablespoons olive oil
- Ground black pepper
- Place tomatoes, cucumber, celery, carrots, onion and garlic in food processor container.
- Cover and process until chopped but not pureed.
- Pour into large bowl, stir in vegetable juice, tomato juice, vinegar and oil.
- Season with ground pepper to taste.
