Imitation Crab Papaya & Walnut Salad.

  • 1-1/2 cups (6 oz) imitation crab meat, shredded, thawed if necessary
  • 1 cup chopped DOLE® Red Bell Pepper
  • 1/3 cup coarsely chopped toasted walnuts
  • 1/4 cup sliced DOLE Green Onions
  • 1/2 cup fat-free plain yogurt
  • 1 tablespoon honey
  • 1/2 teaspoon grated lemon peel
  • 1 package DOLE European Salad Blend or other variety
  • 1 medium DOLE Papaya, peeled, seeded, and sliced


  1. Toss together imitation crab, red bell pepper, walnuts and onions in bowl.
  2. Stir together yogurt, honey and lemon peel in small bowl. Stir into imitation crab mixture. Line two or three plates with salad blend. Arrange papaya slices over each salad. Evenly divide crab salad mixture over papaya on each plate.
  3. Serve, or cover and chill up to 2 hours before serving. Garnish with additional red bell pepper strips, if desired.
